A short history of Sushi
A great way of adding taste and preserving rice
for a longer period of time, was discovered in 1336 - 1573
(Muromachi period in Japan) vinegar was added.
Sushi developed in Osaka, where seafood and rice were pressed together.
In 1799 - 1858 (Edo period)
Hanaya Yohei, invented the sushi
as we know it today, as one of the earliest forms of fastfood.
It was quickly prepared and could be eaten anywhere,
as all the fresh fish used, came from Edo Bay / Tokyo Bay, called Edo-Mae.
The original name for sushi is
Edomae Nigirizushi.
The advent of modern refrigeration allowed sushi made of raw fish
to reach more consumers than ever before.
The late 20th century saw sushi gaining in popularity all over the world.

This is the most typical form of sushi in restaurants.
It consists of an oblong mound of sushi rice that is pressed between the palms of the hands, with a speck of wasabi and a slice of fish called neta draped over it.

Hosomaki (small rolls)
A small cylindrical piece, with the nori on the outside.
A typical hosomaki has a diameter of about two centimeters. They generally contain only one filling, often tuna, cucumber, thinly sliced carrots,
or, more recently, avocado.

Sashimi is a Japanese delicacy primarily consisting of very fresh raw seafood, sliced into thin pieces about 2.5cm (1.0in.) wide by 4.0cm (1.5in.) long by 0.5 cm (0.25in.) thick, but dimensions vary depending on the type of item and chef, and served with only a dipping sauce (soy sauce with wasabi paste and thinly-sliced ginger root or ponzu), and a simple garnish such as shiso and shredded daikon radish.

Temaki (hand rolls)
A large cone-shaped piece of nori or soy wrap on the outside and the ingredients spilling out the wide end.
A typical temaki is about ten centimeters (4 in) long, and is eaten with fingers because it is too
awkward to pick it up with chopsticks. For optimal taste and texture, Temaki must be eaten quickly after being made because the nori cone soon absorbs moisture from the filling and loses its crispness and becomes somewhat difficult to bite.

Gunkan-maki (warship roll)
A special type of nigiri-zushi: an oval, hand-formed clump of sushi rice that has a strip of "nori" wrapped around its perimeter to form a vessel that is filled with some soft, loose or fine-chopped ingredient that requires the confinement of nori such as Ikura (salmon roe), natto, oysters, sea urchin, and quail eggs.
Gunkan-maki was invented at the Ginza Kyubey (Kubei) restaurant in 1931;its invention significantly expanded the repertoire of soft toppings used in sushi.
